Fermented aged meat is aged using the "aging sheet" method developed by Meiji University and Meat Epoch in an industry-academia collaboration. Fermentation-aged meat is prepared in a special aging room, where excess water (free water = drippings) is removed while the binding water filled with flavor is locked in the meat to produce four characteristics: tenderness, flavor, taste, and juiciness (original moisture). The result is a product that is "tenderness", "flavor", "tastiness" and "juicy". It is safer and juicier than conventional dry-aging. The part used is kataroos with a good balance of lean and fat. We hope you will enjoy the concentrated original flavor of black Wagyu beef and the authentic American aged meat. Two kinds of rock salt and a recipe for grilling are included.

Precautions for use:
